Sole’s October Recipe Of The Month - Spicy Lentil Soup (Vegan)
Rapper by day and vegan cook by night, Tim Holland (AKA Sole) keeps himself awfully busy. Sole & The Skyrider Band releases “Plastique” next Tuesday and will be going on tour later this month.
Here’s what Tim has to say:
“I enjoy cooking a lot. As a vegan if I want to eat a varied diet i gotta cook a lot. My saving grace for the past few years has been the international vegan cookbooks by “Linda Majzlik.” they are simple recipes, with cheap ingredients, and are always great. Anwyay, since its fall its a good time to have some stew…. this is a recipe for “spicy lentil soup” but to me its more like a new england corn chowda (carribean style)”
SPICY LENTIL SOUP (Vegan)
ingredients:
8 oz red lentils
1 onion peeled and chopped
2 garlic cloves crushed
40 oz vegetable stock
15g coconut milk
1 tablespoon vegetable oil
1 dessert spoon of hot sauce
1 teaspoon of curry powder
black pepper to taste
Heat the oil in a large pan and soften the onion and garlic. Add the curry powder stir for a minute. Now add the lentils, stock, coconut milk, and pepper sauce, season with black pepper and stir well. Bring to a boil…. reduce heat cover and let simmer for 20 minutes till lentils are tender. The recipe says, then to blend it in a blender then put back in the bowl, but I dont do that. You can if you want. Tthis is so surprisingly good, don’t sleep! Cook it for your man! Cook it for your girl! Cook it for your mom! Cook it for yourself!
